Michelin-starred French technique meets Moroccan soul
Sabo is the Marrakech outpost of Michelin-starred chef Jean-François Piège, and I've dined here four times — each visit better than the last. The concept marries refined French technique with bold Moroccan flavours: slow-cooked lamb shoulder with preserved lemon jus, tarte fine topped with argan oil-roasted tomatoes, and desserts that feel like quiet revelations. The intimate dining room holds around 30 covers with a private garden for warm evenings. Sommelier Karim pairs natural Moroccan wines with precision that surprises every first-timer. Tasting menu around 950 MAD per person. Book at least two weeks ahead — this fills fast. Updated March 2026.

“The tasting menu changes monthly — spring season is when the Moroccan produce really shines. Wine pairing is a must; the sommelier's knowledge of Moroccan wines is exceptional.”
• Sabo is a high-end venue — budget accordingly. Bottle service and VIP tables add up quickly.
• Book ahead, especially on weekends and peak season (March-May, Sept-Nov). Walk-ins may face long waits.
