Koulchi Zine — 'everything beautiful' in Darija — earns its name across four floors of a Medina townhouse that culminates in one of the cleanest 360-degree rooftop views in the city. The architectural frame is mid-century, a deliberate 1960s aesthetic that brings warm-toned terrazzo, rattan furniture, and period lighting into contrast with the ancient roofscape surrounding it. Open daily from noon to 23:00, the kitchen is vegetarian-focused in a city where that remains unusual: dishes are built around seasonal produce, legumes, preserved lemons, and Moroccan spice blends rather than meat-as-default. The menu changes with availability rather than holding rigidly to a card, which keeps it honest. Each floor has its own atmosphere — ground-floor courtyard, intermediate salon, upper terrace, rooftop — meaning you can recalibrate the energy of your visit simply by moving upward.
